Cooking with charcoal requires no electricity, is potentially portable and imparts a unique, traditional barbeque flavour. Charcoal can used for smoking and barbequing in kettles, drums, bullets and kamados, and is versatile enough for direct, indirect or combo heating. Briquettes are a manufactured wood by-product compressed with additives to keep them burning consistently. However, they maintain an even temperature, they burn longer than lump charcoal and they are inexpensive. Lump charcoal on the other hand is an organic product made soley by burning wood in the absence of oxygen. It lights quickly, burns faster than briquettes, responds better to oxygen through vents and leaves little ash. Explore cold smoking nuts, fish, cheeses and other foods in the cooler months, using a pellet tube. Fill it with flavoured pellets, ignite with a long lighter or torch, wait until flames travel to surrounding pellets (usually ten minutes) then extinguish the flame. A twelve inch tube will burn for approximately four hours. Select a compact design, stainless steel construction and a shape that is easy to clean.
